Sauk
- Dere is translated from Adigeian language as "a cold ravine".
The plant is located 208 meters higher above the sea. It is
situated in Krimskii raion, 6 km from Krimsk town. The wine
making enterprise exists in Sauk-Dere from 1956. It was founded
on the territory of the former mines which specialized on the output
of potassium stones. The mines represented vast underground
galleries with the depth of 23,5 meters. Currently wine storages
are placed there. That is why there is always optimal temperature
(11 - 13 Celsius) for wines which are getting matured. During the
year the temperature drops do not exceed 2-3 Celsius.
The
amount of the production in Sauk - Dere is 1 million 200 thousand
dal of liquid for maturing wine. Wines of Anapa and Anapa
region, Gelendzik and Taman peninsula are getting matured
in the unique cellars of the wine plant which is the biggest workshop
in Russia for this process. The white dry collectional wines
are stored here in oak volumes. The
cellars of the wine plant are so big the they can contain all wine
material from all vineyards of the Black sea coast of Russia.
They represent 7 galleries with oak barrels. The whole length
of the galleries is more than 3 kilometers.
