The
history of wine making on the South of Russia
During the Soviet
times the branch of industry worked like this: -
at first on the base of objective datas planting of vineyard was
planned, - it was decided where to plant vine and which
sort will give the biggest harvest with the best quality
and for which wines to use the received wine materials, -
following the received orders collective and state farms grew vine
and brought it for the initial processing to the wine
plants, - later the high quality wine materials were sent
for further processing (for example for making champagne),
for storing and filling bottles which was usually done by special
enterprises. The system was well
- organized and sufficiently reasonable but it could work only within
the frames of Plan ecomonics. And besides it destroyed one
of the main universal principals of wine making - the
principal of unity of the place of growing, processing, storaging
and filling bottles. But at the same time
the Soviet science brought a lot of new things into the
design and creation of new technologies. After
disappearance of Plan estates the industry faced many difficulties.
It turned out that there were not so many estates which
could make the whole chain of processing themselves.
